Easy Spinach Sauce with Ravioli

This is a quick and easy recipe for the mom on the go. It is surprisingly tasty and the kids always wants seconds. Always considered a family treat since it is so healthy.

  • 1 tablespoon olive oil
  • 1 pack spinach and cheese ravioli
  • 3 ozs feta cheese crumbled
  • 2 cups washed Spinach chopped
  • 1 garlic diced
  • 1/4 onions chopped
  • Season to taste
  • 2 green tomatillos green tomatoes, optional
  • 1 large red tomato diced
  • 1 small onion diced


  1. In a large sautĂȘ pan, simmer water and add ravioli, cook as per instructions.
  2. Add chopped spinach, onions and garlic to blender or food processor, add water and press boost or to make smoothie but not as much water.
  3. Oh add chopped tomatillos as well, if you decide to use. This is good acid which helps boost the iron in spinach.
  4. On low heat, add sauce and bring to a simmer, add ravioli cover. Cook for 3-4 more minutes. Add 1 oz cheese to sauce. Stir until dissolved.
  5. Garnish with cheese and red chopped tomatoes on top with onions if desired. Serve warm.
