Well, I have not always been one to enjoy veggies, no I am more a Stew Beans and Rice or Rice and beans person. Yes! I did not know how important vegetable was going to be in my life. Really, I disliked vegetable soup or any vegetable except vegetable salads but that is because of the dressing (homemade or brand.) Psst, today I will share a recipe your and your family will enjoy – Easy Spinach Sauce with Ravioli (Spanish recipe included)!
Now, I have found ways to good memories that I enjoy eating my vegetables and actually drinking them as well. It is really amazing how far I have come and would try many ways to encourage others to eat or drink their vegetables. They really make a difference in your health but we take the vegetables for granted until it is sometimes too late.
Ok, we enjoy eating spinach but only because I remembered how much we used to enjoy grandma’s delicious Spinach Sauce with Pasta but I revised the recipe to Easy Spinach Sauce with Ravioli because it really is, try it.
One important fact that I must relate or tell you: there’s a compound in spinach that blocks the absorption of calcium and iron. This is easily solved by pairing spinach with a food high in vitamin C. Yes, a quick and easy solution would be oranges, lemon, mandarin and cantaloupes to a quick salad. Another way to reduce the power of oxalic acid is to boil the spinach leaves for at least two minutes. In this instance, we can add green tomatoes or red tomatoes, yeah makes it flavorful and colorful.
So let’s begin the recipe and begin cause I am getting hungry with just the thought!!
Easy Spinach Sauce with Ravioli
- 1 tablespoon olive oil
- 1 pack spinach and cheese ravioli
- 3 ozs feta cheese crumbled
- 2 cups washed Spinach chopped
- 1 garlic diced
- 1/4 onions chopped
- Season to taste
- 2 green tomatillos green tomatoes, optional
- 1 large red tomato diced
- 1 small onion diced
In a large sautê pan, simmer water and add ravioli, cook as per instructions.
Add chopped spinach, onions and garlic to blender or food processor, add water and press boost or to make smoothie but not as much water.
Oh add chopped tomatillos as well, if you decide to use. This is good acid which helps boost the iron in spinach.
On low heat, add sauce and bring to a simmer, add ravioli cover. Cook for 3-4 more minutes. Add 1 oz cheese to sauce. Stir until dissolved.
Garnish with cheese and red chopped tomatoes on top with onions if desired. Serve warm.
Have extra, they will ask for more! 🙂
Salsa de Espinaca facil con Ravioli
1 cuchara de aciete de oliva
1 paquete de espinaca y queso
3 onzas de queso de feta, desmenuzado
2 tazas de espinaca lavada, picada
1 ajo cortado en cubitos
1/4 cebollas, picadas
Sazone al gusto
2 tomatillos verdes (tomates verdes) opcional
1 tomate rojo grande, cortado en cubitos
1 cebolla pequeña, cortaditos
En un sartén grande, cocine a fuego lento con agua y agrega los ravioles, cocine según las instrucciones. Agregue la espinaca, la cebolla y el ajo picados a la licuadora o al procesador de alimentos. Agregue agua y aumenta la presíon o para hacer batido pero no con tanta agua. Ah agrega los tamatillos picados también, si decides usarlos. Este es un buen ácido que ayuda a aumentar el hierro en la espinacas. En guego lento, agregue la salsa y cocine a fuego lento, agregue la cubierta de ravioles. Cocine por 3-4 minutos más. Agregue 1 onza de queso a la salsa. Revulva hasta que se disuelva. Adorne con queso y tomates rojos picados en la parte superior con cebollas si lo desea. Sirve caliente. ¡Ten más, pedirán más!
The color may not look enticing but the taste is excellent. The kids normally return asking for more. The secret ingredient is the cheese, of course :)!
