A tasty quick and easy recipe.

We all love banana in this home. We have some monkeys in this area that just gobble them down. This week for some unknown reason we had a couple that were too ripe. Oh yeah, when it is too ripe, it is not eaten. Well, I have been yearning for some mini banana muffin and for sometimes had not made any of My Grandma Quick and Easy Mini Banana Muffin and just had to make them. Really had not baked anything for a while so sharing the quick and easy recipe with you all.
- 1½ cup mashed ripe bananas (3 ripe bananas)
- 1 cup olive oil (vegetable oil would be just fine)
- 4 eggs
- 1½ cup sugar
- 2½ cup all purpose flour
- 2 teaspoon baking powder
- 1 tsp salt
- ½ cup diced walnut (optional)
- Preheat 360 degree fahrenheit.
- In a large bowl, mix bananas, oil and eggs. Add sugar, flour and baking soda, oops and salt. Mix well until all ingredients are well blended. Add walnuts. Others might be allergic to nuts, be safe. Fill tins and bake for 20 -25 minutes or until done.
Magdalenas de plátano
1 1/2 taza de puré de plátanos maduros (3 plátanos maduros)
1 taza de aceite de oliva (el aceite vegetal estaría bien)
1 1/2 taza de azúcar
2 1/2 taza de levadura de polvo
1 cucharadita de sal
1/2 taza de nuez picada (opcional)
Precalienta 360 grados Fahrenheit. En un tazón grande, mezcle los plátanos, el ciete y los huevos. Agregue azúcar, harina y bicarbonato de solio, oops y sal. Mezcle buen hasta que todos los ingredientes estén bien mesclados. Agregar nueces. Otros pueden ser alérgicos a las nueces, estén seguros. Rellene las latas y hornee por 20-25 minuntos o hasta que esté listo.
Oh my goodness, I thought I would make some for the week but it seems the mini muffins never fails. Oh now I will have some surprises for breakfast next year. It is healthy, quick and easy, so excellent idea for a snack as well. Oh, You can make it healthier if you break the flour in two sets = 1 cup flour and 1 /2 oats flour. Try it you will be amazed at the flavor. Let me know what you think?
