So how are you all doing? Are you all having a great day? I hope you are enjoying life with the whole family and keeping things in order. Well, I am a latina at heart and really there is one protein rich super food that I grew up with and enjoy immensely. I have been told, “Beans are good for you heart.” I sure can eat this super food any time of the day! Pressure Cooker Red Beans Delicioso every day, jejej!
This super food is High in fiber and antioxidants. What we do not realize is that vegetarians need 3x the amount of beans as it is a meat substitute. Oh yes, besides being food for the waistline, they may aid in disease prevention as well. The meat is given elements that make them grow quicker and larger and our children eat these elements indirectly. The meat indirectly causes cancer, diabetes and also makes us overweight. Having beans in our diet is very important. Beans are also good sources of iron, magnesium, potassium, zinc, folate and vitamin B-6. Well, no more ranting as I will be using my latest tool in the kitchen and making Red Beans, yes!
Pressure Cooker Beans Soup

Pressure Cooker Red Beans
Ingredients
- 1 lb red beans small
- 2 cloves garlic diced
- 1 onion diced
- thyme & oregano to taste
- salt
- pepper
- olive oil
Instructions
-
Manually use the Saute function on the electric model.

Saute onions, garlic until onions comes clear.

Stir in the beans, thyme and oregano, salt and pepper.

Add water to cover about an inch over = 1 1/2 cup.

Lock the lid into place and manually set time to 15 minutes on the electric model.

Use the quick release method to release the pressure until it is safe to unlock the lid.

Stir well and serve.

Add sour cream and diced tomatoes and cilantro to decorate.
Receta de Frijoles Rojos Pequeños en la Olla de presión eléctrica
- 1 libra de frijoles rojos pequeños
- 2 dientes de ajo en cubos

Metodo

Remember you can always cook these beans in the slow cooker, it takes longer. You can also cook them on the stove top with the same ingredients will not be as slow as the slow cooker.
