Hope you all have a Wonderful day with your loving family. A Mother’s Joy is always the security and comfort of their children. I will always be THANKFUL for the mother I have. She has shown me what the love and sacrifices a mother make for her children. As a child or a teenager, I did not realized what Love or Sacrifice is.
As a mother, I am most grateful for all the lessons I have learned from my dearly loving mom. She was always there to listen and talk at the precise moment I needed her most even though I thought she was annoying. I sure am happy for the person she is and all the moments we spent together.
My mom loves Banana Bread and on her behalf, we made it and enjoyed it for her as she was not able to be with us this year.
1 c sugar
1 cup of applesauce
1/2 c butter/margerine
1 tsp vanilla
2 1/2 c flour
1 tsp b soda
1 tsp salt
1 c ripe banana mashed
1/2 c buttermilk (1 c milk + 1 tbsp apple cider vinegar)
Preheat oven 350 degrees fahrenheit. Grease baking pans. In large bowl, mix sugar and butter til soft. Add eggs, applesauce, bananas, buttermilk and vanilla. Beat on high speed with mixer until smooth. Stir in flour, baking powder, salt and nuts (optional) until moist. Pour into pans.
Bake for 25-30 mins; cupcake. Test if done by using a toothpick. If it comes out dry, it is done. Cool 10 minutes placing on cooling rack. Cake pan: 40-60 minutes.
